Minimal Processing

The SonoSteam® technology is a minimal processing technology designed to limit the impact of the decontamination on nutritional and sensory qualities of the products without the use of synthetic additives. 

SonoSteam is a thermal process. The steam is distributed to the products for a short time, subsequently the products are ventilated and cooled to return to the initial temperature.

Since there is a contradiction between maximal microbial reduction and minimal sensory changes an acceptable "window" between the two shall be established for each application. Depending on the delicacy and sensory qualities of the product and the intended extension of reduction, SonoSteam can be controlled according to the actual product to find an appropriate window. 

Organic

SonoSteam only features ultrasound and steam made from potable water. The SonoSteam technology is not controversial in any way and does not use any chemicals (e.g. disinfectants, antibiotics, additives or processing acids) that otherwise may leave residues.

SonoSteam is an optimal solution in an organic production ensuring safe and healthy food.
